Chicken Tortilla Casserole

Just had to share this yummy recipe I got from a friend,something different and delish

Chicken Tortilla Casserole~

CHICKEN FILLING:
4 pieces Chicken Fillet cut into strips
1 tsp garlic
1/2 tsp ginger garlic
1 tsp crushed red chillies
1 tsp salt
1/2 tsp chilli powder
1tsp peri peri spice or paprika
1/4 tsp tumeric
2tblsp lemon juice to make a paste with all these masala and marinate chicken in this.

METHOD:
Saute 1 onion in 3 tblsp ghee till soft. Add chicken & cook 4 5mins. Add 1 grated tomato n enough water 2cook chicken till soft.
Filling must have a little gravy n must not be dry.
[Mushroom/cubed potatoes maybe added 2filling if desired]

TORTILLA:
1cup flour
1/4 tsp salt
1cup cold water
1tblsp milk
Pinch of bicarb
1/2 cup mealie meal
1 egg
1 tblsp ghee or soft butter
2 tblsp yoghurt

Sift flours & salt & rub in ghee. Beat egg, yoghurt, bicarb, milk &water together. Make soft batter. Heat griddle &make tortilla. Keep under warm under cloth.

WHITE SAUCE :
2tblsp butter
2tblsp flour
1/2 tsp garlic
1 &1/2cup milk
1/2 cup cream
3tblsp mayyonaise
Salt n pepper
Mix flour n butter 2make a roux. Add the rest of the ingredients n stir 2make a sauce.

Grease casserole. Take 1 tortilla add filling, roll like a swiss roll &place tightly next 2each other in casserole. Make white sauce &pour over. Sprinkle with grated cheese &red pepper & italian herbs/parsely. Bake for 1/2 hour on 180 deg.

The first time I tried this recipe,I forgot to add the water,completely leaving it out I added a little more flour to form a dough,rolled them out into rotis n fried them on a tawa! Still came out yummy,just that the tortillas were thick,its suppose to be like thin pancakes…trust me to do silly things like that,but its a matter of trial and error in the kitchen,that’s how u learn right?! πŸ˜‰
